Easy Muffin Recipes: Classic, Lemon, and Cottage Cheese
Today, we’re making three simple muffin recipes! These classic, lemon, and cottage cheese muffins are fluffy, soft, and wonderfully aromatic. All recipes use easily accessible ingredients, perfect for beginner bakers.

Recipe #1: Classic Muffins
Ingredients:
- 3 Eggs
- 70 g Vegetable oil
- 140 g Milk
- 80 g Butter (melted)
- 1 tsp Vanilla sugar
- Pinch of salt
- 250 g Sugar
- 370 g Flour
- 10 g Baking powder (1 tbsp)
- 100 g Raisins
Instructions:
- Preheat your oven to 180°C (350°F).
- In a bowl, whisk together the eggs, vegetable oil, melted butter, milk, vanilla sugar, and salt.
- Gradually add the sugar and mix well.
- In another bowl, combine the flour and baking powder. Slowly add this mixture to the wet ingredients, stirring until just combined.
- Fold in the raisins.
- Pour the batter into a muffin tin and fill each cup about 2/3 full.
- Bake for approximately 40 minutes, or until golden brown and a toothpick inserted comes out clean.
Recipe #2: Lemon Muffins
Ingredients:
- 3 Eggs
- 200 g Sugar
- Pinch of salt
- 120 g Butter (melted)
- 100 ml Milk
- Zest of 1 lemon
- 250 g Flour
- 1 tsp Baking powder
- 3 tbsp Lemon juice
Optional Topping:
- 3 tbsp Condensed milk
- 2 tbsp Lemon juice
Instructions:
- Preheat your oven to 180°C (350°F).
- In a large bowl, whisk the eggs and sugar until well combined.
- Add the melted butter, milk, lemon zest, and pinch of salt. Mix well.
- In another bowl, combine the flour and baking powder, then gradually mix this into the wet ingredients.
- Stir in the lemon juice.
- Pour the batter into a lined muffin tin, filling each cup about 2/3 full.
- Bake for 30–35 minutes, or until light golden and a toothpick inserted comes out clean.
- For the topping, mix the condensed milk and lemon juice together and drizzle over the muffins.
Recipe #3: Cottage Cheese Muffins
Ingredients:
- 2 Eggs
- ½ tsp Salt
- 1 tsp Vanilla sugar
- 100–150 g Sugar
- 300 g Cottage cheese
- 40 g Butter (melted)
- 250 g Flour
- 10 g Baking powder
- 3 tbsp Sour cream
- 50 g Raisins
Instructions:
- Preheat your oven to 170°C (340°F).
- In a bowl, whisk together the eggs, salt, vanilla sugar, and sugar until combined.
- Stir in the cottage cheese and melted butter.
- In another bowl, mix the flour and baking powder, then add to the wet mixture.
- Fold in the sour cream and raisins until just combined.
- Pour the batter into a muffin tin, filling each cup about 2/3 full.
- Bake for 25–30 minutes, or until golden brown and a toothpick comes out clean.
