a good explanation for why pay such a high price is, "face". especially if you are trying to impress guests.. say a wedding banquet. what you serve tells your guests a lot about you as a host. also, chinese people love to talk about what they had at a wedding banquet more than the actual couple who got married.. and they can continue talking about it years later.
