Ingredients

- 6 eggs
- 150 g sugar

- 1 packet vanilla sugar

- 300 g butter (room temperature)
- 15 g gelatin (prepared over a double boiler)

1. Sponge Cake:
- Whip the Eggs: In a large mixing bowl, beat 6 eggs with 150 g of sugar using a mixer for approximately 10 minutes or until the mixture becomes fluffy and pale.
- Fold in the Flour: Gently incorporate 180 g of flour mixed with 1 tsp of baking powder into the egg mixture, folding carefully to maintain airiness.
- Bake: Pour the batter into a prepared baking pan and bake at 170°C (338°F) for about 20 minutes. Once done, let it cool completely before cutting into two layers.
2. Custard Cream:
- Heat the Milk: In a saucepan, bring 800 ml of milk to a gentle boil.
- Prepare the Egg Mixture: In a bowl, whisk together 8 egg yolks, 260 g of sugar, 4 tbsp of cornstarch, and 1 packet of vanilla sugar until well combined.
- Combine and Thicken: Gradually pour some of the hot milk into the egg mixture, stirring constantly. Return this mixture to the saucepan, adding in the remaining milk. Cook over low heat until the mixture thickens, then allow it to cool completely.
3. Buttercream:
- Cream the Butter: In a clean bowl, beat 300 g of room-temperature butter until creamy and fluffy.
- Mix in the Custard: Gradually add the cooled custard cream into the butter, mixing until smooth.
- Incorporate Gelatin: Add 15 g of dissolved gelatin and mix well until combined and fluffy.
4. Assembly:
- Layering: Spread part of the cream on the first layer of the sponge cake.
- Add Strawberries: Place fresh, sliced strawberries on top and cover with more cream.
- Final Touch: Carefully place the second cake layer on top, adding any additional cream for decoration as desired.
- Chill: Refrigerate the cake overnight to allow the flavors to meld beautifully before serving.
Homemade Strawberry Pastila
