The Allure of the Quesadilla
Quesadillas are a staple in Mexican cuisine, beloved for their simplicity and ability to accommodate a variety of fillings. Ree takes this classic dish to new heights by elevating it with the luxurious combination of creamy Monterey Jack cheese, savory shrimp, and crispy bacon. Add in some fresh vegetables, and you have a meal that’s not just easy to prepare but also bursting with flavor.
The Recipe Breakdown: Easy and Delicious
Ingredients
- 2 slices bacon: The foundation of flavor.
- 8 ounces jumbo shrimp, peeled and deveined: A delicious protein complement.
- 1 teaspoon chili powder: For that warm, earthy spice.
- 1 teaspoon ground cumin: Adds a rich depth to the filling.
- 1/2 teaspoon kosher salt: Enhances the natural flavors.
- 1 Fresno chile, sliced into rounds: A touch of color and heat.
- 1 jalapeño, sliced into rounds: More heat for the spice lovers!
- 1/2 red onion, sliced thin: For sweetness and crunch.
- 1 small zucchini, sliced into thin half-moons: A great way to add more veggies.
- 3 tablespoons salted butter: For cooking and richness.
- 2 large burrito tortillas: The wrapping for our delicious filling.
- 1 1/2 cups shredded Monterey Jack cheese: The melty goodness that holds everything together.
- 2 tablespoons fresh cilantro leaves: For garnish and freshness.
- 1/2 cup salsa: For added flavor and dipping.
- 1/2 cup sour cream: To cool things down.
Directions
-
Cook the Bacon: Start by placing the bacon in a large skillet over medium-high heat. Cook, stirring until crispy, about 5 minutes.
-
Add the Shrimp: Once the bacon is crisp, add the shrimp in a single layer. Sprinkle with half of the chili powder, cumin, and salt. Stir and cook until the shrimp turn pink, about 2 to 4 minutes. Remove the combination to a paper towel-lined plate.
-
Sauté the Veggies: In the same skillet, add the sliced Fresno chiles, jalapeños, onion, and zucchini. Sprinkle with the remaining seasonings and cook for about 2 to 3 minutes until softened. Remove and set aside with the shrimp and bacon.
-
Assemble the Quesadilla: Wipe the skillet clean and return it to the heat. Add butter and place one tortilla in the pan. Top with half of the cheese, then layer the shrimp, bacon, and vegetable mixture. Add the remaining cheese on top and cover with the second tortilla.
-
Cook to Perfection: Cook the first side until golden brown, about 3 to 4 minutes, then carefully flip the quesadilla and cook the other side for another 3 to 4 minutes until golden and crispy.
-
Serve and Enjoy: Transfer to a cutting board, slice into wedges, and garnish with fresh cilantro. Serve with salsa and sour cream on the side for a delightful finishing touch.

MY LORD!!! This looks Delicious!!!!! I Love Shrimp enchiladas and Quesadillas the best!!!
More like a flat burrito but looks delicious
It looks good but bacon and shrimp? 🤔
You guys ruin my diet😤
This is not the best use of shrimp. Adding bacon, jalapenos, and Fresno chilies will over power the shrimp. Probably better made with diced chicken or ground beef.
Just like shrimp fajitas quesadillas . Minus the bacon.
Yummy
Nice
Yummy, thanks for sharing
Excellent & I like the way she uses plain old off the shelf spices, just shake them in…
just the thought of shrimp and bacon makes me want to vomit
My Apologies but I am not a fan of her at all. !!
It makes me laugh when I see why people trying to make Mexican food, they are so clueless!!!
Yum!
