Shirley’s Homemade Curry Chicken 🍛
Ingredients:
- 1 kg chicken or chicken mid joints
- 1 kg potatoes
- 400 ml coconut cream
- 1 packet A1 curry paste (meat)
- 6 to 8 cloves garlic
- 6 to 8 small onions (shallots)
- 1 thumb-sized piece of ginger
- SPICES: 1 cinnamon stick, 2 star anise, 4 cloves, cardamom
Instructions:
- Grind garlic, shallots, and ginger; place in a bowl.
- Heat oil in a pan and fry the mixture on low heat. Add spices until fragrant.
- Stir in the curry paste and fry well.
- Add sliced potatoes and chicken, stirring until well coated in paste.
- Pour in coconut cream and 200 ml water (adjust to preference).
- Simmer on low heat for 20 minutes.
- Turn off heat and let it rest covered for 30 minutes before serving.
