Key Ingredients
- Good Olive Oil: The foundation for sautéing the onions, imparting rich flavors.
- Chopped Yellow Onions: The soulful base for the meat loaf, adding sweetness and moisture when cooked down.
- Fresh Thyme Leaves: A hint of herbal brightness to elevate the earthy flavors.
- Kosher Salt & Freshly Ground Black Pepper: Essential seasonings that enhance the natural flavors of your ingredients.
- Worcestershire Sauce: A splash of umami that deepens the overall taste.
- Canned Chicken Stock or Broth: Adds moisture and richness.
- Tomato Paste: For added savoriness and to integrate seamlessly into the loaf.
- Ground Chuck: The star of the dish, known for its perfect fat-to-lean ratio, keeping the meat loaf moist.
- Plain Dry Bread Crumbs: These act as a binder, helping the meat loaf hold its shape.
- Extra-Large Eggs: They add structure and help combine the ingredients.
- Ketchup: The classic topping that creates a delicious glaze.
Cooking Instructions
-
Preheat the Oven: Set your oven to 325 degrees F to get ready for our meat loaf masterpiece.
-
Sauté the Vegetables: In a medium sauté pan, heat olive oil and add chopped onions, fresh thyme, salt, and pepper. Cook these ingredients over medium-low heat until the onions are translucent, about 8 to 10 minutes.
-
Combine Flavors: Off the heat, stir in Worcestershire sauce, chicken stock, and tomato paste, allowing the mixture to cool slightly before moving on.
-
Prepare the Meat Mixture: In a large bowl, mix the ground chuck with the cooled onion mixture, bread crumbs, and beaten eggs. Use a fork for a gentle mix—avoid mashing as this can lead to a dense meat loaf.
-
Shape and Bake: Shape the mixture into a rectangular loaf on a parchment-lined baking sheet, then spread ketchup on top for that classic finish. Bake in the preheated oven for 1 to 1 ¼ hours, or until an internal temperature of 160 degrees F is reached. For an extra tip, place a pan of hot water in the oven to prevent the top from cracking.
-
Serve and Enjoy: Once cooked through, elevate your meal by serving hot, enjoying every heartwarming bite.

Meatloaf is for SANDWICHES

That meatloaf looks so tender, juicy and comforting, definitely the kind of meal that warms the heart.
I love that it's a free-form shape. Her turkey meatloaf's delicious, as well. (Worth a try. 😊)
I seen someone put meatloaf in a muffin tin to cook, because they were the only one eating (single) it. Now, that it is only my husband and me that sounds like a good idea. I eat also smaller portions as well. Your recipe sounds mouth watering, and I love the idea of a pan of water under the meatloaf while cooking. Thanks for the wonderful video.
I have never put any type of glaze on my meatloaf. Am I missing something??
I used the same precook onion method I also add mushrooms to mine
I smoke my meatloaf, it is amazing.
No ketchup!
Doesnt make sense to use chicken broth in a ground beef loaf. I use beef broth.
I do a barbeque parmesan meatloaf but never added the pan of water. Ima try that next time
Ketchup only? Gotta have hot sauce in there somewhere!😊
I made this BC meatloaf 3 days ago, that pan of hot water did the trick, I had the most delish moist meatloaf ❤
We just LOVE you Ina….your haircut reminds me of my Mom's.
I never make a meatloaf without adding a tube of pork breakfast sausage
Stay French not good
I used to shape the meatloaf into the letter of my kids first name. They thought that was great.
Hummmm… can someone tell me what's the science or "magic" behind putting hot tap water at the bottom? I know the water bath technique when baking cheesecake but this one is a thinker!
This is my favorite go-to meatloaf recipe. Have made it many times. It's really good.
Oh Emmm Geeeee that Kitchen is Marvelous. Burners, Space and Storage Abound!!!
Music off please
Why not bell peppers in your meatloaf?
meatloaf recipes can be tricky when longing for that firm but oh so juicy result. Ina's is definitely a trusted one to try for us amateur home cooks that want to do things a little better but still keeping things relatively simple and budget friendly.
I found meatloaf to have that extra savory goodness when wrapped on top with bacon…
American cooking… big slab of meat onion salt and pepper 😂😂😂
I put mine on the parchment, on a cookie rack. All grease drips into the pan that has the water in it. Perfect. And even the bottom gets a little crispy
No thanks, it's not vegetarian.
Please put the camera IN the meatloaf so we can see better
I always add some brown sugar and Worchester sauce to the ketchup for the glaze but ketchup by itself works well too.
Ina still looks great. She looks the same as she did over 20 years ago!
👍👍
Exceptional video experience here! Thanks for showing me your version! This time, I’m using Tomato Paste, and I’m using Bragg Aminos to substitute for Worcestershire Sauce. Kudos!! 👍👍👍
Ina Garten is so fake. She was so nasty to Martha Stewart. Also she lied about why she doesn't have children claiming she chose not to but in fact she and her husband wanted them
Outstanding!
With all due respect, this is NOT how you make meatloaf!! You do NOT put processed ketchup on top!! Instead, you mix fresh tomato puree in with the meatloaf, along with minced garlic. Nothing processed goes in or on top of a meatloaf. No excuses!!!
I so agree hands are best. But saying that I've seen so many people in my life and I'm probably one of the somebody's who forgot to take my rings off. 😅
I like a slight crunch on top just a little crust but juicy inside.
Ooh how about some green beans and buttery mashed pitatoes
