Strawberry Meringue Roll and Strawberry Cake Recipe

In this video, I will guide you through making two incredibly delicious desserts that simply melt in your mouth!

Recipe 1: Strawberry Meringue Roll

Ingredients:

  • Egg whites: 6 (about 190 grams)
  • Pinch of salt
  • Sugar: 250 grams
  • Lemon juice: 1 tablespoon
  • Cornstarch: 25 grams
  • Fresh strawberries: 200 grams

For the Cream:

  • Cream cheese: 250 grams
  • Heavy cream (33%): 150 ml
  • Powdered sugar: 30 grams

Instructions:

  1. Preheat your oven to 120°C (250°F).
  2. In a clean bowl, whip the egg whites with a pinch of salt until foamy.
  3. Gradually add sugar while continuing to whip until stiff peaks form.
  4. Gently fold in lemon juice and cornstarch until well combined.
  5. Spread the meringue on a parchment-lined baking sheet and shape it into a rectangle.
  6. Bake for about 1 hour, then turn off the oven and leave the meringue inside for another hour.
  7. Once cooled, whip the cream cheese until smooth. In another bowl, whip the heavy cream with powdered sugar until stiff peaks form, then gently combine both mixtures.
  8. Spread the cream mixture evenly on the meringue and top with sliced strawberries.
  9. Roll the meringue tightly using the parchment paper and refrigerate for at least 1 hour before serving.

Recipe 2: Strawberry Cake

Ingredients:

For the Biscuit:

  • Eggs: 3
  • Sugar: 70 grams
  • Pinch of salt
  • Vanilla sugar: 1 teaspoon
  • Vegetable oil: 4 tablespoons
  • Flour: 125 grams
  • Baking powder: 1 teaspoon

For the Cream:

  • Eggs: 2
  • Sugar: 70 grams
  • Vanilla sugar: 1 teaspoon
  • Pinch of salt
  • Cornstarch: 2 tablespoons
  • Milk: 500 ml
  • Butter: 30 grams

For the Soaking:

  • Milk: 250 ml

For the Strawberry Layer:

  • Fresh strawberries: 500 grams
  • Sugar: 2 tablespoons
  • Lemon juice: 60 ml
  • Cornstarch: 1 tablespoon
  • Water: 70 ml

Instructions:

  1. Preheat your oven to 180°C (350°F).
  2. For the biscuit, beat the eggs with sugar and salt until fluffy. Add vanilla sugar and vegetable oil, mixing well.
  3. Gradually incorporate the flour and baking powder, stirring gently until smooth.
  4. Pour the batter into a greased and floured cake pan and bake for about 25-30 minutes. Allow to cool completely.
  5. For the cream, whisk the eggs with sugar, vanilla sugar, and salt in a saucepan. Gradually add cornstarch dissolved in a bit of milk, then add the rest of the milk.
  6. Cook over medium heat while stirring until thickened. Once thick, remove from heat and mix in butter until melted and incorporated.
  7. For the strawberry layer, combine strawberries, sugar, lemon juice, cornstarch, and water in a saucepan. Cook over medium heat until thickened, then let cool.
  8. Once the biscuit is cool, soak it with milk. Spread the cream on top, followed by the strawberry layer.
  9. Refrigerate for a couple of hours before serving.
