I like egg drop soup. Had it once after a bridge work on a tooth and couldn't eat anything hard, there was a Chinese place right near the Dentist and tried egg drop as they didn't have my favorite Wonton Soup, one taste and I was hooked.

I do something like this; but I make egg dumplings with 1:1 cornmeal and white flour – and to spice with garlic, turmeric, and black pepper.
Then, the ginger stays in the broth and the garlic stays in the starch. It gets better if the two preserving acids, garlic and ginger are separated.

This is pretty authentic except for the hot sauce. As soon as eggs go back to a reasonable price i will make this, I used to make once a month but eggs are tp precious to you 6 eggs in soup. ❤
