I’m having a hard time figuring out (in the first recipe) why you’d cook the turkey part way before applying the compound butter. 🤔 That just makes it more difficult to apply the butter to the bird—it mostly just melted off immediately. When the bird is cold, apply a well-seasoned softened compound butter under and over the skin … voila! … self-basting turkey. 🦃 🧈 😋 No need to cover it or take it out at all until it’s done.
