- One 20-ounce can pineapple rings
- 1 tablespoon chile lime seasoning
- One 18-ounce bag round tortilla chips
- 1/3 cup chopped fresh cilantro
- Lime wedges
Directions
Step 1: Cook the Shrimp
- In a large skillet, heat the butter and olive oil over medium-high heat.
- Once the oil is hot, add the shrimp in a single layer.
- Sprinkle the shrimp with chili powder, cumin, kosher salt, and black pepper.
- Cook the shrimp undisturbed for 2 to 3 minutes until browned. Stir and cook for another 2 minutes.
- Deglaze the pan by adding lime juice, mixing well. Remove the skillet from heat and set aside.
Step 2: Prepare the Mashed Avocado
- In a bowl, mash the avocados with lime zest and juice until well combined.
- Stir in the chopped cilantro, jalapeño hot sauce, and a pinch of kosher salt and black pepper. Taste and adjust the seasoning as needed.
Step 3: Assemble the Tostadas
- Cut the pineapple rings into 8 pieces each and set aside.

Correction: If using a medium-hot pan you don't want to cook the shrimp beyond 90 seconds on each side. Any recipe is fine however, the methodology shown here is wrong! It all depends on the size of your shrimp count.
Made these tonight! Added quartered scallops to the shrimp. Layered Guacamole and corn and mango salsa, shrimp and scallops. Topped with a sour cream, mayo, lime, cilantro and garlic sauce. Wonderfully fresh and light dinner.
