To start, bring a large pot of salted water to a boil and add the rigatoni, cooking according to package directions for al dente. Add the broccolini for the last 4 minutes of cooking and then drain, reserving 2 1/2 cups of the cooking water.

Add the sliced onion and cook until softened, then add in tomato paste, red pepper flakes, and garlic. Cook until fragrant and then add in 2 cups of the reserved pasta water, simmering until reduced by half.
Add the cooked pasta and broccolini to the sauce along with fresh parsley, tossing to coat and adding more water if needed. Taste and adjust seasoning with salt if necessary. Sprinkle with grated Pecorino Romano cheese and toss well.

I love the Pioneer Woman. Love this show, and her entire family. This looks delcious. The only thing I would change is not adding the red pepper flakes as I do not like spicy.

There was a time during the covid lockdown that she collaborated with her kids and made their own homemade food episodes. I thought it was a great way to still give the viewers what they want but still keeping a safe distance from the public. We all were in our own little world weren't we?
