Recipe 1: Nutty Rolls

  • 300 g all-purpose flour

  • ½ tsp baking powder
  • 1 tsp vanilla sugar
  • 100 g unsalted butter, softened
  • 200 g sour cream (or plain yogurt)
  • 1 egg yolk

Filling:

  • 200 g nuts, finely chopped
  • 1 egg white
  • 2 tbsp granulated sugar
  • 5 tbsp powdered sugar

Instructions:

  1. Preheat your oven to 180°C (356°F).
  2. In a bowl, mix the flour, salt, baking powder, and vanilla sugar.
  3. Add the softened butter, sour cream, and egg yolk. Mix until a dough forms.
  4. For the filling, beat the egg white until frothy. Fold in the finely chopped nuts, granulated sugar, and powdered sugar.
  5. Roll out the dough and cut it into strips. Place a small amount of filling on each strip and roll it up.
  6. Place the rolls on a baking sheet lined with parchment paper.
  7. Bake for 20–25 minutes or until golden brown.

Ingredients:

  • 280 g all-purpose flour
  • 1 tsp baking powder
  • A pinch of salt
  • 1 tsp vanilla sugar
  • 80 g unsalted butter, softened
  • 2 eggs
  • 70 g granulated sugar
  • 40 g nuts, finely chopped
  • 80 g chocolate, chopped

Instructions:

  1. Preheat your oven to 180°C (356°F).
  2. In a mixing bowl, whisk together the flour, baking powder, salt, and vanilla sugar.
  3. In another bowl, cream together the softened butter and granulated sugar until light and fluffy.
  4. Beat in the eggs, one at a time.
  5. Gradually add in the dry ingredients, mixing until just combined. Fold in the chopped nuts and chocolate.
  6. Scoop out small portions of dough and place them on a baking sheet lined with parchment paper.
  7. Bake for 12–15 minutes or until edges are slightly golden.
