Top 3 Summer Pies: Peach, Apricot, and Strawberry
Recipe 1: Peach Pie with Custard (20 cm pan)
Ingredients
Shortcrust Pastry
- 1 Egg
- 70 g Sugar
- 90 g Unsalted Butter, softened
- 230 g All-purpose Flour
- ½ tsp Baking Powder
- Pinch of Salt
Custard
- 1 Egg
- 70 g Sugar
- 25 g Cornstarch
- 250 ml Milk
- 40 g Unsalted Butter
- 1 tsp Vanilla Sugar
Fruit Layer
- 400 g Peaches, sliced
- 80 g Sugar
- 10 g Gelatin
- 100 ml Water

Prepare the Shortcrust Pastry:
Contents- In a mixing bowl, combine the egg, sugar, and softened butter. Mix until creamy.
- Gradually add flour, baking powder, and a pinch of salt. Mix until a dough forms.
- Press the dough into the bottom and sides of a greased 20 cm pan. Chill in the refrigerator.

Make the Custard:
- In a saucepan, whisk together the egg, sugar, and cornstarch.
- Gradually add the milk while stirring constantly. Cook over medium heat until thickened.
- Remove from heat and stir in butter and vanilla sugar. Allow to cool slightly.

Prepare the Fruit Layer:
- Soak gelatin in water for about 10 minutes, then heat gently until dissolved.
- Toss sliced peaches with sugar and mix with dissolved gelatin.
- Assemble:
- Pour the custard over the pastry base, then layer the peaches on top.
- Chill in the refrigerator until set.
Recipe 2: Apricot Pie with Crunchy Topping (25×17 cm pan)
Ingredients
For the Dough
- 2 Eggs
- 100 g Sugar
- Pinch of Salt
- 1 tsp Vanilla Sugar
- 70 ml Vegetable Oil
- 130 g Sour Cream or Yogurt
- 220 g All-purpose Flour
- 1 tsp Baking Powder
- 350 g Apricots, halved and pitted
Crunchy Topping
- 50 g All-purpose Flour
- 50 g Sugar
- 50 g Cold Unsalted Butter, cubed
Instructions

Prepare the Dough:
- In a bowl, whisk the eggs, sugar, salt, and vanilla sugar.
- Add vegetable oil and sour cream/yogurt. Mix until combined.
- Gradually sift in flour and baking powder. Mix until smooth.
- Fold in halved apricots.

Prepare the Crunchy Topping:
- In a separate bowl, mix flour and sugar. Add cold butter and rub with fingers until crumbly.
- Assemble:
- Pour the apricot batter into a greased 25×17 cm pan.
- Sprinkle the crunchy topping over the batter.
- Bake at 180°C (350°F) for about 30-35 minutes, or until golden.
Recipe 3: Strawberry Pie with a Lemon Twist (25×17 cm pan)
Ingredients
- 2 Eggs
- 180 g Sugar
- Pinch of Salt
- 60 ml Vegetable Oil
- 150 g Kefir or Yogurt
- 250 g All-purpose Flour
- 10 g Baking Powder
- 2 tbsp Lemon Juice
- 350 g Strawberries, hulled and sliced
Instructions

Prepare the Batter:
- In a bowl, whisk together the eggs and sugar until frothy.
- Add the salt, vegetable oil, and kefir/yogurt. Mix until combined.
- Gradually incorporate flour and baking powder. Mix until smooth.
- Stir in lemon juice and sliced strawberries.
- Assemble:
- Pour the batter into a greased 25×17 cm pan.
- Bake at 180°C (350°F) for about 30-35 minutes, or until a toothpick comes out clean.
