In the past i had this wrong idea about it but the chef at work opened my eyes. it's incredible how many good varieties he can make with just vegetarian filling and different sauces.

The amount of shells that didn't open on that plate makes me question the quality of the products the first place uses. If clams/oysters/mussels shells don't open, they're rotten. They're not fit to serve. They're not not fit for human consumption. They should NOT have been even on that dish.

I'm not saying that Chaps Pit Beef is the best. I'm not saying it isn't either. But, if you really wanna understand some proper uniquely Maryland food, take a rest from them crab cakes and learn about the glory of some good pit beef. When it's done right, you cannot eat it while standing, or you will collapse. You will come back on the floor, asking those around you to explain why your entire mouth is crying tears of joy.
I have used vacation hours to take a long lunch just to drive into the city and get a decent pit beef sandwich.
If the place is good enough to ask you how you want it cooked, then the proper answer is "as rare as you got". Since it stays on the heat all day long, bloody-red rare is generally not available from the late afternoon on.
It's not really blood; don't freak out. It's "myoglobin" a normal boring old (DELICIOUS) PROTAIN.

I have been to a number of places Guy has done a segment. One was condemned, the others food was horrific. I believe most of the restaurants he recommends are not worth going to. He has a show to do and what was the last restaurant you have seen every have a thumbs down? Or he gave a bad review? He's always positive, even though you go there and it's dog food. This isn't reality, it's an informercial.
So he basically only went to Balitmore. Gothca. No eastern shore or western mountains. Very interesting. Your propaganda is in the wrong part.
