Ingredients:

For the shortcrust pastry:

  • 250 g all-purpose flour
  • 1 tsp baking powder
  • A pinch of salt
  • 100 g unsalted butter, softened
  • 1 large egg
  • 2 tbsp sugar

For the filling:

  • 300 g sour cream
  • 2 large eggs
  • 60 g sugar
  • 1 tsp vanilla sugar
  • 2 tbsp cornstarch (30 g)
  • 3 tbsp jam (any variety)

Instructions:

  1. Prepare the Shortcrust Pastry:

    • In a mixing bowl, combine the flour, baking powder, and a pinch of salt.
    • Add the softened butter and mix until it resembles fine crumbs.
    • Incorporate the egg and sugar, mixing until a smooth dough forms.
    • Press the dough into the bottom and slightly up the sides of a greased pie dish, ensuring an even layer.
  2. Make the Filling:

    • In a separate bowl, whisk together the sour cream, eggs, sugar, vanilla sugar, and cornstarch until smooth and well combined.
    • Gently fold in your choice of jam until evenly distributed within the mixture.
  3. Assemble the Pie:

    • Pour the sour cream filling over the prepared shortcrust pastry in the pie dish.
    • Smooth the top with a spatula for an even surface.
  4. Bake:

    • Preheat your oven to 180°C (350°F) and bake the pie for approximately 30–35 minutes, or until the filling is set and the top is lightly golden.
  5. Cool and Serve:
    • Allow the pie to cool slightly before slicing. This pie pairs perfectly with tea and melts in your mouth!
