Obviously, this is personal taste but anytime you add raisins to anything, it's ruined, as far as I'm concerned. For the Waldorf salad, she should have stuck with tradition (grapes). Raisins are dried up little warts that only kids should want to eat. One time she was making this wonderful looking bread pudding & then she added raisins, and I cringed.

Potato leek soup is notoriously vegetarian.. add vegetable broth if you’d like to keep it that way instead of the chicken broth

What do you do with the oil and butter frying mixture after you have fried your shallots? I would hate to discard this and want to find a way to reuse this. It seems a shame to not recycle that mixture.
The soup looks amazing, but I'm not waiting 30-40 minutes for shallots. I'll buy the fried onions in the can. I'm sure they are just as good.
