For the Dough:
- 110 g unsalted butter
- 130 g sugar
- 2 eggs
- 1 tsp vanilla sugar
- 1/4 tsp salt
- 1/4 tsp turmeric
- 250 g all-purpose flour
- 1 tsp baking powder
- Powdered sugar (for dusting)
For the Lemon Filling:
- 70 g sugar
- Zest of 1 lemon
- 2 eggs
- 70 ml lemon juice
- 60 g unsalted butter
- 1/4 tsp turmeric
Instructions

Prepare the Dough:
- In a bowl, cream together the unsalted butter and sugar until light and fluffy.
- Add the eggs one at a time, mixing well after each addition.
- Stir in the vanilla sugar, salt, and turmeric.
- Gradually add the flour and baking powder, mixing until combined.

Make the Lemon Filling:
- In a separate bowl, whisk together the sugar, lemon zest, eggs, lemon juice, unsalted butter, and turmeric until smooth.

Assemble the Cookies:
- Preheat your oven to 180ยฐC (356ยฐF).
- Roll out the cookie dough and cut it into desired shapes.
- Place half of the cookies on a baking sheet, add a spoonful of the lemon filling on top, and then cover with the remaining cookies.
- Press the edges to seal.

- Bake in the preheated oven for 15-20 minutes or until golden brown.
- Dust:
- Once cooled, dust with powdered sugar before serving.
