If you’ve never made arayes, this is the recipe to try. Pita pockets are filled with juicy, warmly spiced beef and lamb, then cooked in butter until deeply golden and irresistibly crisp. Every bite has crunchy pita on the outside and a tender, flavorful meat filling inside.
Don’t have lamb or simply don’t like it? Skip it and make the filling entirely with ground beef. It will still be delicious.
This easy Middle Eastern stuffed pita recipe is cooked entirely in a skillet, with no oven needed. I serve the crispy arayes with a cool tahini yogurt sauce and a fresh Levantine tomato and cucumber salad with lemon and sumac. It’s the perfect combination of rich, crisp, creamy, and refreshing.
