that eggplant recipe looked great except for the idiotic amount of basil she used, basil is like parsley, you sprinkle it on, not layer it.

Roasting instead of frying is the part people skip, fried slices drink the oil and the whole tray goes heavy. Goat cheese in the layers is the unusual call. Does it stay tangy after baking?
Watch out! I made this recipe exactly as stated and it turned out wayyyy too salty. Dial back on the salt slightly and I"m sure this recipe is quite good lol
