As the leaves begin to change and the air turns crisp, there is nothing more heartwarming than the aroma of freshly baked pastries wafting through your home. This season, join me on a delightful culinary journey as we craft rustic walnut pastries, embracing the essence of autumn in every bite.
A Taste of Tradition
Inspired by the age-old techniques from our village roots, these walnut pastries embody the warmth and comfort that the autumn harvest brings. With fresh, seasonal walnuts and simple homemade ingredients, we create a dish that is perfect for sharing around the family table, paired with a cozy cup of tea.
Ingredients
For the Dough:
- 80 g butter
- 1 tea glass of milk
- 1 tea glass of water
- ½ tea glass of vegetable oil
- 1 egg
- A pinch of salt
- 1 tbsp plain yogurt
- 2 tbsp vinegar
- About 6 regular glasses of flour
For the Syrup:
- 5 regular glasses of water
- 4 regular glasses of sugar
- Juice from a few lemon slices for a touch of brightness
Filling:
- 300 g chopped walnuts, their rich flavor will elevate our pastries
- 300 g melted butter for pouring over the pastries
- Starch for rolling out the dough
Method
Step 1: Prepare the Dough
In a mixing bowl, combine the butter, milk, water, vegetable oil, egg, salt, yogurt, vinegar, and gradually incorporate the flour. Knead until the dough reaches a soft, pliable texture. Once ready, cover it with a clean cloth and let it rest for 30ā45 minutes. This ensures a tender dough that will envelop our cozy walnut filling.
Step 2: Create the Syrup
While the dough rests, letās prepare our syrup. In a saucepan, combine the water, sugar, and freshly squeezed lemon juice. Bring this mixture to a boil, then reduce the heat and let it simmer for about 25 minutes. This luscious syrup will drench our pastries, infusing them with sweetness.
Step 3: Roll and Shape the Pastries
Once the dough has rested, sprinkle some starch on your work surface and roll it out. Fold it into an envelope shape, sprinkling starch between the folds to prevent sticking. Roll it out thinly again before generously sprinkling with the chopped walnuts. Folding the two opposite edges towards the center, cut lengthwise between the rolls, and use the rim of a glass to shape crescent pieces.
Step 4: Bake to Perfection
Place the shaped pastries on a tray and pour melted butter over them, ensuring theyāre well-coated. Bake at 160°C for approximately 1 hour, or until they turn a beautiful golden brown. Keep an eye on them as ovens can vary!
Step 5: Drench in Syrup
As soon as they come out of the oven, pour the hot syrup over the warm pastries. Let them cool completely, allowing the syrup to absorb and infuse each pastry with flavor.
