For those making a cheesecake of any kind a bit of advice….
If you want to make fluffy scrambled eggs you beat them hard to get air into them. When making a cheesecake you DO NOT want to add air or you will almost guarantee it will collapse as it cools. Always add your eggs last to the stand mixer and gently incorporate them into the batter. Do not over mix.
ps: Afraid of a water bath leaking leaking into your cheesecake? Reynolds (wrap) make crock pot oven proof plastic bags. (Similar to those bags for cooking a chicken in). They will hold up to a 10" (25cm) springform pan and you will never have to worry about water leaking in.
