These look delicious, especially the first potato patties. I grew up seeing my dad cook; he'd mix mashed potato with finely chopped cooked veggies – carrots, cabbage, peas … whatever was handy or left over plus mixed herbs, then he'd roll them in breadcrumbs and b/c he had to cut dietry fat he'd bake them until the outside was crispy. I do enjoy seeing others' versions of potato croquettes.

The first recipe is made the same way in Algeria, especially during the month of Ramadan. It's exactly the same recipe. we name it MAAKOUDA and I love it It's so delicious.
As usual Sophie hits it out of the park. I've been asking for a potato pancake recipe for a year and AT LAST we have it and it looks GREAT! Question. Is it necessary to peel the potatoes? I like the skin on. ONE other addition I suggest. When I make potato pancakes I always top them off with applesauce. GIVE it try! 😸💕
