When you have a good thing, DON'T EFF IT UP! I hate it when a restaurant has a great dish, and discontinues it for a newer dish that isn't anywhere near as good. You don't need to be fancy. You don't need to be cool. You just need good food at a reasonable price.
I would rather go to a mom and pop diner, for a pork chop, mashed potatoes, and some greens over some "wanna be next big thing" restaurant. BBQ is food for the poor, initially, and it should still be the food of the people.
I swear to god you could take the worst cuts of meat and if you can make a good BBQ, then that meat will sell. You can take a tough old chicken, and make an excellent BBQ chicken.
I live 10 minutes from this place and hate that I’ve never tried it before. Gotta put it at the top of my list!
I visited the USA in 2024 and top of my list of best food was brisket.
