Lately I’ve been living on rice bowls for lunch and dinners, they’re so versatile, so quick and these honey garlic prawn rice bowls hit that sweet–savory spot perfectly. The prawns cook in minutes, turning glossy and sticky while the rice steams in the microwave and the veg gets chopped, so you’re never more than a few songs on the radio away from dinner.

Ingredients
Honey Garlic Prawns
1 teaspoon oil
1 teaspoon unsalted butter
300 g (10.5oz) pack raw king prawns (defrosted and de-veined)
¼ teaspoon salt
¼ teaspoon black pepper
½ teaspoon paprika
2 cloves garlic peeled and minced
3 tablespoon light soy sauce
4 tablespoons honey
Rice Bowl
500 g microwave basmati or long grain rice (2x 250g packs or 1.1 lb altogether)
½ cucumber thinly sliced
1 avocado de-stoned and chopped into chunks
½ small red onion peeled and finely diced
1 tablespoon mixed black and white sesame seeds
3 tablespoons chopped fresh coriander cilantro
Instructions
1. Heat the microwave rice through, as per the pack instructions. Once cooked, it can be left in the packs for a few minutes, while you cook the prawns.
2. Now make the prawns. Heat the oil and butter in a frying pan (skillet) over a high heat until the butter starts to bubble.
3. Season the king prawns with the salt, pepper and paprika, then add to the pan and fry, turning often with a spatula for 1-2 minutes, until the prawns start to turn pink.
4. Turn the heat down to medium and add the garlic. Stir together for a further minute, then add the soy sauce and honey.
5. Stir together for a further minute, then turn off the heat.
6. Divide the rice between bowls. Arrange the honey garlic prawns on top, along with the cucumber, avocado and red onion.
7. Drizzle any sauce left in the pan over prawns and rice.
8. Sprinkle on the sesame seeds and fresh coriander and serve.
Notes
This recipe serves 4 but can easily be scaled to serve 2 by halving the ingredients.
Tip: Swap out the plain microwave rice for a flavoured rice. Lime and coriander or roasted garlic flavours are firm favourites in our house.
