Mix Eggs and Sugar: In the bowl of an electric mixer fitted with the paddle attachment, beat the eggs and sugar on medium-high speed for 5 to 10 minutes. You’ll want the mixture to become very thick and light yellow in color.

Sift Dry Ingredients: While the egg and sugar mixture is being whipped, sift together the cocoa powder and flour in a separate bowl. Set this mixture aside for later.
