In this recipe video, we will be making Ina Garten’s delicious Rum Raisin Truffles. These truffles are the perfect combination of rich, creamy chocolate and sweet, boozy raisins.
Ingredients:
– 1/2 cup raisins
– 1/2 cup rum
– 12 ounces semisweet chocolate, chopped
– 1/2 cup heavy cream
– 1/2 teaspoon vanilla extract
– 1/4 teaspoon salt
– Cocoa powder, for rolling
Instructions:
1. In a small saucepan, heat the raisins and rum over low heat until the raisins are plump. Remove from heat and let cool.
2. In a separate saucepan, heat the heavy cream until it just begins to simmer. Remove from heat and add in the chopped chocolate. Let it sit for a minute, then stir until the chocolate is melted and smooth.
3. Stir in the vanilla extract, salt, and rum-soaked raisins. Let the mixture cool to room temperature, then refrigerate for at least 1 hour, or until firm.
4. Using a small cookie scoop or spoon, scoop out small portions of the chocolate mixture and roll into balls. Roll the truffles in cocoa powder to coat.
5. Store the truffles in an airtight container in the refrigerator until ready to serve.
