Kardea Brown’s Tuscan Chicken Soup is a comforting and hearty dish that is sure to lift your spirits, whether you’re feeling under the weather or simply in need of a warm and delicious meal. This recipe is packed full of vegetables, tender chicken, and flavorful seasonings that come together to create a soup that is truly satisfying.
To start, you’ll need extra-virgin olive oil, diced white onion, celery, minced garlic, tomato paste, all-purpose flour, chicken stock, heavy cream, boneless, skinless chicken thighs, Tuscan kale, sun-dried tomatoes, and grated Parmesan cheese. These ingredients combine to create a rich and flavorful broth that will leave you craving more.
To make this soup, begin by sautéing the onion and celery in olive oil until they are softened and translucent. Add in the garlic, tomato paste, and flour, stirring to coat the vegetables. This will help thicken the soup once the liquid is added. Pour in the chicken stock and bring to a boil before adding the heavy cream and chicken thighs. Cook until the chicken is cooked through and falling apart, then shred it and return it to the pot along with the kale, sun-dried tomatoes, and Parmesan. Let the soup simmer for a bit longer to allow the flavors to meld together.
For a fun twist, serve this Tuscan Chicken Soup in toasted bread bowls. Simply cut off the tops of the bread boules, scoop out the centers, and toast them in the broiler until golden brown. Ladle the soup into the bread bowls, sprinkle with more Parmesan, and enjoy!

I love Kardea's cooking and recipes but what is going on here???
Tomato in chicken soup? This seems more like a quick chicken pot pie. Why would you not use bone-in chicken thighs to enhance the flavor? I love Kardea but this is a direct miss.
