To start, you will need a skin-on boneless whole turkey breast, along with a seasoning mixture of kosher salt, garlic powder, onion powder, paprika, and freshly ground black pepper. After seasoning the turkey breast and tying it with twine to form a log shape, let it chill in the refrigerator for at least 4 hours before cooking.
In a Dutch oven, melt butter and add diced carrot, celery, onion, and garlic, cooking until tender. Add a bouquet garni of fresh thyme, sage, and rosemary, along with bay leaves. Place the prepared turkey breast on top of the vegetables and pour in white wine and chicken stock around the turkey.
Cover the Dutch oven with a lid and bake in the oven at 350 degrees F for 1 hour. Then, remove the lid and continue baking until the turkey reaches an internal temperature of 165 degrees F. Once cooked, remove the turkey and tent with foil.
To make the gravy, remove the bouquet garni and bay leaves from the Dutch oven and add more chicken stock. Whisk in Dijon mustard and use an immersion blender to puree the mixture until it reaches your desired consistency.

Why did she leave the string on the leaves
If I know I have to use the immersion blender. I always have a glass beside my sink. I just fill it with a little hot water. And dishwashing soap. And give it a whiz in the cup. And then a rinse under the sink. Pop that puppy back in the drawer. 🤣
