In this episode of The Kitchen, Katie Lee Biegel shares her foolproof recipe for Fish, Lemon and Asparagus Foil Packs that are perfect for grilling. This recipe is a whole meal in each packet, making it a convenient and delicious option for dinner.
To start, preheat your grill to medium-high heat or light a strong fire. While the grill is heating up, gather your ingredients: 20 spears of trimmed asparagus, 4 cups of frozen long-grain white rice, 2 cloves of thinly sliced garlic, 4 boneless, skinless flounder fillets or another thin and flaky white fish, lemon pepper seasoning, unsalted butter, and lemons.
On four large pieces of foil, layer the ingredients in the following order: 5 spears of asparagus, 1 cup of frozen rice, 1/2 clove of sliced garlic, 1 piece of fish, 1/2 tablespoon of lemon pepper seasoning, 3 pats of butter, and some lemon slices. Wrap the foil around all of the ingredients to enclose the packet.
Place the foil packs on the grill or over the fire and allow them to cook for 20-30 minutes, or until the fish is fully opaque and flakes easily with a fork and the rice is hot. Let the packets sit for 5 minutes before opening and serving hot. Squeeze over some lemon wedges for added brightness and enjoy!
If you prefer to cook this dish in the oven, preheat it to 400 degrees F and bake the foil packs until the fish is cooked through and flaky, about 20-30 minutes.
