As a food journalist, I had the pleasure of experiencing the artistry and dedication that goes into creating some of the best mezcal in the world at Agua Mágica in Oaxaca, Mexico. Rogelio Juan Hernández, the maestro mezcalero and co-founder of Agua Mágica, has been perfecting his craft since the young age of 13 and has since become a master in the industry.
Handcrafting 3,000 liters of mezcal each month, Hernández and his team of mezcaleros take great care in every step of the process. From harvesting and roasting agave, to cooking, fermenting, and distilling the spirit, each batch is made with precision and attention to detail.
The result is a subtle yet versatile mezcal that captures the essence of Oaxaca. Bartenders around the world have taken notice of the quality of Agua Mágica’s mezcal, using it in cocktails to enhance flavors or simply serving it straight over ice to savor its complex and unique taste.
The dedication and passion that Hernández and his team put into crafting their mezcal is evident in every sip. Agua Mágica’s mezcal is a testament to the rich tradition and heritage of Oaxaca, making it a must-try for any spirits enthusiast looking for a taste of Mexico’s finest.
