This is the same recipe as Delia Smith’s Pistachio Sablés, with the chopped pistachios switched out for thyme. Delia got it about 20 years ago from Head Pastry Chef, Mark Mitson, at The Blakeney Hotel in Norfolk, England and published it in her subsequent Happy Christmas book. Always make twice the quantity you think you need as guests vacuum these up! The English ones are cocktail sablés, about half the size of these American ones!
