Olive Oil
1 Onion
3 Potatoes
2 Tomatoes
1 tsp Salt
1/2 tsp Black Pepper
4-6 Eggs
Jalapeno (optional)
Cilantro

INSTRUCTIONS:
1. Heat Olive oil in a large skillet over medium heat.
2. Add potatoes and sauté for 6-8 minutes, until they are almost cooked through.
3. Add onions and cook for an additional 2-3 minutes, until the onions are slightly softened.
4. While the onions cook, finely dice tomatoes and add them to the pan. Season with salt and black pepper. Cover and cook for 6 minutes on low heat.
5. Reduce the heat to low. Crack each egg into a separate bowl, then add them one by one into the pan.
6. Cover the skillet with a lid and cook for 7 minutes, or until the eggs are cooked to your preference.
