This looks so yummy! Rustic, yet elevated dish perfect for Autumn 🍁 my only additions would be to tweak how the chops 🥩 are cooked; I'd definitely saute them more within that silky apple cider reduction 🍎 and also adding a bit of apple cider vinegar for tartness, and a splash of Applejack whiskey, or even a nice Madeira or sherry, along with the heavy cream is glorious! But my only real critique is the spinach; it is beautiful in this dish, visually, but not with the flavor profile of apple cider, in my opinion. Possibly a good substitute would be mushrooms? Porcini or baby bella button mushrooms thinly sliced gives "Marsala" vibes, which is awesome! Serve this dish alongside a light mixed greens salad 🥗 and some crusty baguette 🥖 and it's just beautiful 😍 Also, choose a nice crisp wine, I'd do White Zinfandel 🍷 A superb simple recipe 👍😁✌️🗽

Pork and apple just go so well together. I like to crock pot pork tenderloin in hard cider. Doesn't need to be hard cider, but i usually have hard cider available in the house. Gives a delightful apple flavor to the tenderloin. Jerk seasoning makes it even better!
LOL! MY mother was the same. My father would have been happy with any old meat, potatoes, and some sort of vegetable. But my mother, she liked to experiment. So sometimes we ate really well, and sometimes the experiment didn't work out so well. But we loved her anyway. RIP mom, your cooking will always be missed by me.

I would also add, don't buy cheap "balsamic" vinegar. The stuff made in the US is usually made in a factory somewhere from chemicals, not fermentation. Do yourself a favor, and buy a good bottle of authentic fermented balsamic from Italy. You will be able to taste the difference.
I use balsamic vinegar sprinkled over lettuce as a salad dressing. If you buy the good stuff, that's all you need. It won't be overly acidic, it will be sweet and funky.
