Welcome to the heart of Turkish culinary tradition, where the simple ingredients of the earth are transformed into a flavorful masterpiece: Village-Style Turkish Bulgur Dumplings, lovingly known as İçli Köfte. This cherished recipe reflects the warmth of village life and celebrates the joy of gathering around the table with family and friends.

Ingredients

For the Outer Shell:

  • 2 cups fine bulgur wheat
  • 1 cup semolina
  • 1 tsp salt
  • 1 tsp paprika
  • 1 tbsp tomato paste
  • 1œ cups warm water
  • 1 egg

For the Filling:

  • 500 g (1 lb) ground beef or lamb
  • 2 large onions, finely chopped
  • œ cup chopped walnuts or pine nuts (optional)
  • 2 tbsp vegetable oil
  • 1 tsp salt
  • œ tsp black pepper
  • œ tsp ground cumin
  • œ tsp red pepper flakes
  • 2 tbsp chopped parsley

For Frying:

  • Vegetable oil

Instructions

Prepare the Filling:

  1. Sauté the Onions: In a pan, heat vegetable oil over medium heat and sauté the chopped onions until they are soft and translucent.

  2. Add the Meat: Incorporate the ground beef or lamb, cooking until browned and fully cooked through.

  3. Season: Stir in salt, black pepper, cumin, and red pepper flakes for that rich flavor. If you’re using them, add the walnuts or pine nuts next.

  4. Finishing Touches: Once the filling is well combined, remove it from the heat and fold in the chopped parsley. Allow the filling to cool completely.

Prepare the Outer Shell:

  1. Soak the Bulgur: Place the fine bulgur wheat in a large bowl and pour the warm water over it. Allow it to sit for about 10 minutes until softened.

  2. Combine Ingredients: Add semolina, salt, paprika, tomato paste, and the egg to the bulgur.

  3. Knead: With passion and patience, knead this mixture for 10–15 minutes until it forms a smooth and pliable dough. If you find the dough too dry, add a splash of water to enhance its texture.

Shape the İçli Köfte:

  1. Wet Your Hands: This helps to prevent sticking while you work.

  2. Form the Dumplings: Take a small ball of dough (about the size of a golf ball) and hollow it out gently with your thumb to create a thin shell.

  3. Fill and Seal: Spoon about 1 tablespoon of the savory meat mixture into the hollowed shell. Carefully seal the opening and shape it into an oval with pointed ends, ensuring all the filling is encased securely.

Fry Your Dumplings:

  1. Heat the Oil: In a deep pan, heat vegetable oil to 170–180°C (340–355°F).

  2. Golden Perfection: Fry the stuffed dumplings in batches, allowing them to cook until they are golden brown and delicious—approximately 4–5 minutes.

  3. Drain: Use a slotted spoon to transfer them to a plate lined with paper towels to drain any excess oil.

Serve:

Serve these delightful dumplings hot, accompanied by fresh lemon wedges, yogurt, a crisp salad, or a refreshing glass of ayran. This recipe makes about 20–25 pieces, perfect for sharing with loved ones!
