INGREDIENTS:
2 Potatoes
2 Eggs
1 tbsp Butter
Season with salt and pepper
Chives (optional)

INSTRUCTIONS:
1. Grate the potatoes. Squeeze out as much of the liquid as possible. Working quickly, transfer potato to a large bowl.
2. Add 1 tbsp of unsalted butter to a small (9 inches/23 cm) heavy-bottomed pan over medium-high heat. Once the butter is hot add potato to the pan. When the edges brown and crispy, about 5 minutes, flip.
3. Add 2 eggs. Cook until the second side is browned and the eggs are cooked to desired doneness, about 3 to 5 minutes more. Place on a plate and sprinkle with salt and garlic. Mmm…lecker 🤤🥰
