Each city and region of Morocco has its own unique culinary specialties, influenced by Berber, Andalusian, and Mediterranean traditions.
🔥 Marrakech: Famous for its Tangia Marrakchia, a slow-cooked meat dish prepared in a clay pot with spices, preserved lemon, and garlic. The Mechoui, a whole roasted lamb cooked slowly in underground ovens, is also a must-try. And of course, you can’t miss the freshly squeezed orange juice at Jemaa el-Fna Square!
🌊 Casablanca & Rabat: These coastal cities are known for their fresh seafood and fish, often grilled or cooked in delicious tagines. Casablanca is also home to the seafood pastilla, a refined variation of the traditional chicken and almond pastilla.
🏜 Fès: The culinary capital of Morocco, Fès is the birthplace of the famous Tfaya couscous, topped with caramelized onions, raisins, and almonds. The traditional Pastilla is also a must-try—crispy layers of pastry filled with pigeon meat, almonds, and cinnamon, creating an exquisite sweet-savory blend.
⛵ Tangier & Tetouan: Northern Moroccan cuisine is heavily influenced by Andalusian and Mediterranean flavors. Grilled fish, zaalouk (smoky eggplant salad), and a variety of fresh salads are staples here. The Harira of the North, lighter and more citrusy than the rest of Morocco, is also a local specialty.
⛰ Middle & High Atlas: The Berber regions have their own specialties, such as the Berber tagine, usually made with seasonal vegetables and local spices. Another highlight is Rfissa, a dish made with shredded msemen (flaky Moroccan pancakes), chicken, lentils, and fenugreek.
