Cooking Overview
This recipe is classified as easy and serves 12 to 16 people, making it ideal for family gatherings or potlucks. In just about 1 hour and 50 minutes, you’ll have a delectable dish that’s sure to impress.
Ingredients You’ll Need
- 8 baking potatoes, washed
- 3 tablespoons canola oil
- 2 sticks salted butter
- 1 cup bacon bits (freshly fried for the best flavor!)
- 1 cup sour cream
- 1 cup shredded Cheddar or Jack cheese (or a delightful mix of both)
- 1 cup whole milk
- 2 teaspoons seasoned salt
- 3 green onions, sliced
- Freshly ground black pepper to taste
Step-by-Step Directions
-
Preheat Your Oven: Set your oven to 400°F (200°C) to prepare for baking the potatoes.
-
Bake the Potatoes: Place the washed potatoes on a baking sheet, rubbing them with canola oil. Bake them for 1 hour until they’re cooked through.
-
Prep Your Ingredients: While the potatoes bake, slice the butter into pats and place them in a large mixing bowl. Add the crispy bacon bits and sour cream.
-
Scoop and Mix: Once the potatoes are ready, lower the oven temperature to 350°F (175°C). Carefully cut each potato in half lengthwise and scoop out the insides into the mixing bowl, leaving a small rim for support.
-
Creamy Filling: Mash the scooped potato with the butter, bacon, and sour cream mixture. Stir in the shredded cheese, milk, seasoned salt, and sliced green onions (note: if you plan on freezing, skip the green onions).
-
Fill and Bake Again: Generously fill the potato shells with the creamy mixture, then sprinkle additional grated cheese on top. Return them to the oven and bake for 15 to 20 minutes until warmed through and golden.
These Twice-Baked Potatoes not only taste incredible but also showcase the essence of Ree Drummond’s home cooking—creating heartwarming dishes that bring loved ones together. With crispy skins and a melty cheese topping, they’re a meal on their own or a delightful side dish.

What season of The Pioneer Woman was this? I've never seen Ree with darker hair. Though she did admit in one of the latter seasons of TPW [Christmas episode where it had snippets of the goodies that she made in the past seasons] that she didn't like the darker shade of red
