Cooking a Luau at Home
While you might not be able to replicate the tropical paradise of Germaine’s Luau in your backyard, you can certainly capture the essence of a Hawaiian luau with your own celebratory feast. Here’s a simple guide to making some iconic dishes that would fit perfectly on any luau buffet:
Ingredients
-
Roasted Pig (Lechon)
- 1 whole pig (or pork shoulder for home cooking)
- Hawaiian sea salt
- Onions, garlic, and green onions for stuffing
-
Huli Huli Chicken
- 4 chicken thighs, skin-on
- ¼ cup soy sauce
- ¼ cup brown sugar
- ¼ cup pineapple juice
- 2 cloves garlic, minced
- 1 tablespoon ginger, grated
-
Poi
- 2 cups taro root, peeled and cubed
- Water
-
Mac Salad
- 2 cups macaroni
- 1 cup mayonnaise
- ½ cup shredded carrots
- Chopped celery, green onions, and seasonings to taste
Instructions
-
Roasting the Pig:
- If using a whole pig, season it generously with Hawaiian sea salt and stuff with garlic and onions. Slow roast it over an open flame or in a pit. Alternatively, rub a pork shoulder with salt and roast in the oven at 300°F for 5-6 hours until tender.
-
Huli Huli Chicken:
- Marinate chicken thighs in soy sauce, brown sugar, pineapple juice, garlic, and ginger for at least 2 hours.
- Grill over medium heat, basting with the marinade, until cooked through and caramelized.
-
Making Poi:
- Boil the taro root until tender, then drain and mash, gradually adding water to achieve a smooth, pudding-like consistency.
-
Mac Salad:
- Cook the macaroni according to package instructions, drain, and cool.
- In a bowl, mix mayonnaise with shredded carrots, celery, and green onions. Combine with cooled macaroni, season, and chill before serving.
Celebrate the Spirit of the Luau
Set up your dining area with tropical decorations, lei garlands, and some lively Hawaiian music to complete your luau experience. The Pot Pie was too cute 🥰 ll
07:42 The pastry is clearly raw in the middle lol
09:13 Risotto was literally the last thing he said…
You can see that chef getting annoyed every time Guy pronounces risotto incorrectly
I used to work for Nico. He’s the real deal, and not just seafood. His wife’s father owns a fishing fleet.
3:50 my whole family had those same bowls when I was younger
It all I had to eat for the rest of my life had to be a pot pie I would die happy 💯
🤤🤤🤤
I love this show! Guy is a LEGEND
Great video, but Guy did not go to Germaine’s Luau in Kapolei, HI, in it, I really wanted to watch the episode, I am planning on going back to Oahu and would like to go to a Luau for the first time, I haven't been to Oahu since 1983 when I won a free trip for two from Koni Shock absorbers for selling the most shocks in the company when I worked for Supershops Automotive Performance Centers in the 1980's.
Guy is right about the to-go containers. It sucks. Before Covid Nicos used plates, dining wear, glasses and had table service. Today, is like they don't care at all. Great food isn't that only reason I'll eat somewhere. Eating out of Styrofoam at once was a great place, isn't acceptable. Funny how Guy called them out and the Chef ignored the comment.
