Let’s make some plant-based purple sweet potato pancakes welcome back to the whole food plant-based cooking show where we make plant-based cooking easy I’m Jill and today we’re going to make these delicious little purple sweet potato pancakes not pancakes like the ones you put the syrup and and fruit and stuff on
These are just these teeny little pancakes that you can use either Savory or sweet and I’m going to show you that in the end but first we got to get our potatoes cooking so I’ve got my instant pot out here I’m going to put my little trivet in with a steamer
Basket I’m going to pour a cup of water in the bottom and then I’ve got my sweet potatoes here this recipe doesn’t call for this many we’re probably going to use about two of this size but it’s always good to cook up some sweet potatoes at the start of the week so
Then you can have them already in your refrigerator you can use them as a base for any of our delicious sauces or even eat it like mashed potato cuz they’re so delicious so we’re just going to put all of these in our steamer basket I’ve already washed these and
Dried them off a little bit you don’t have to prick them or anything this is just the quickest easiest way to cook these so we’re going to pressure cook them for 20 minutes and we’re going to put on the lid make sure you got the vent closed

Puree and you don’t even have to really mash it up you can kind of just press it with your hands just to get it in your cup then I have a half a cup of buckwheat flour but you could also use oat flour that works just as well 2 tbspoon of flax
Meal 1/ teaspoon of brags liquid Minos um that’s just for a little bit of saltiness you could also just use a little bit of regular salt or even uh a little bit of miso they all work just fine you just want just a hint of Sal
Saltiness in there so now I’m just going to mix these up I’ve got a pastry cutter here I just find that’s the easiest way to get it all Incorporated at first to get it all to stick together okay and if you find that your potatoes are still a little too dry or
You feel like this mixture feels a little bit too dry what we’re going for is really just to get it to stick together and you can do the rest of it you can mix it together with your hands just to make sure it’s all Incorporated together and so it sticks together if
Your potatoes are a little bit dry um you can always add you know a tablespoon or two of water and you can do that as you go just one at a time just so it doesn’t get too too wet and these purple sweet potatoes these are great uh they’re loaded with
Antioxidants you know by that really bright purple color it’s so good for for you and it’s a resistant starch which is really good for your gut biome okay now that we have it mixed together and we know it’s sticking into a ball like this I’m going to grab my

Off all right so we’re going to take some of our sweet potato and you’re just going to make little balls and this is completely up to you how big you want your little pancakes to be but we’re going to make make them about this size you could make them a little bit
Bigger but I like to have them a little bit more just like single serving size okay and you’re just going to kind of flatten them with your hands and then make them a nicer round shape just by tapping the sides a little bit and then we’re going
To press it down into the sesame seeds flip it over you want them on both sides okay and then you put it out on your cookie sheet and I already have it lined with a piece of parchment paper so I’m going to continue to make all of these and I’ll show you when
We’re ready to put them in the oven okay we’re done so this makes six of this size right here so now we’re going to stick these into our oven on 400° for 25 minutes all right guys they’re out of the oven if you want to come and take a
Look they look so great and they smell great so I’m going to let these cool for a little bit and then I’ll meet you at the table for a taste and I’ll show you how I like to eat them all right let’s test these little guys out so I like to
Eat mine I like to eat them for breakfast as kind of like a toast alternative so I like to put a little bit of peanut butter and then a little bit of a sugarfree jam on the top so yummy and the sesame seeds are crunchy and if you wanted to go Savory
