In this episode of Maneet’s Eats on Food Network, Chef Maneet Chauhan shares her tips and tricks for making delicious potato and pea samosas at home.
To begin, we’ll need to make the dough for the samosas. In a bowl, combine all-purpose flour, rice flour, ajwain seeds, and salt. Rub ghee into the flour until it resembles breadcrumbs, then mix in cold water to form a pliable dough. Cover and let it rest for 30 minutes.
For the potato filling, grate boiled potatoes and set aside. In a skillet, heat oil and add cumin seeds, fennel seeds, and coriander seeds. Stir in ginger, serrano chile, and peas, then add garam masala, amchur, asafetida, fenugreek, and cumin. Mix in the grated potato, season with salt and pepper, and fold in cilantro.
Now it’s time to assemble the samosas. Divide the dough into portions, roll into balls, and flatten into discs. Cut each disc in half to create semicircles. Brush the straight edge with water, fold into a cone, fill with the potato mixture, and seal the edges.
Heat oil in a pot and fry the samosas until golden brown. Drain on paper towels and serve hot with tamarind or mint chutney, or ketchup.

Maneet is definitely the quintessential Indian cooking queen, hands down she's the best indeed!
You need to make 100's of Samosas a day, because it takes about 6-10 to feed a person, depending on appetite (assuming they only eat samosas). And if there are good samosas on hand, i don't care if they are vegetable, or some sort of meat. So tasty.
And you definitely need the chutney, if you don't have it, you'll miss it. Although, you can definitely eat and enjoy Samosas plain, the chutney just makes them sublime.
