It’s been an unexpected adventure, woven with moments of joy, cozy meals, and self-reflection. This week’s vlog features a blend of healthy, easy recipes that fuel both my body and soul.

A Taste of My Week

Healthy and Easy Meals
This week, I had a delightful farro chicken salad that’s quickly become a favorite. Paired with fresh veggies and a zesty dressing, it’s a nutritious meal that satisfies without the guilt.

In addition, I explored the art of making poke handrolls. These vibrant, customizable bites are perfect for post-run recovery, offering a refreshing mix of flavors.

Comfort Food
Sometimes, we need a little comfort to balance out the workouts. Enter cabbage toast! This unique dish is both hearty and comforting, perfect for a cozy night in.

And for those sweet cravings, I whipped up a batch of the BEST banana muffins. They’re a crowd-pleaser loaded with chocolate chips, making them a guilt-free indulgence.

Recipes to Try

🍌 Banana Muffins

Ingredients:

  • 2 cups flour
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1/3 cup butter, melted
  • 1/3 cup sugar
  • 1/3 cup brown sugar
  • 1 cup mashed banana
  • 2 eggs
  • 1/4 cup Greek yogurt
  • 2 tsp vanilla extract
  • 1 cup chocolate chips

Instructions:

  1. Preheat the oven to 425°F (220°C).
  2. In a bowl, mix flour, baking powder, and salt.
  3. In another bowl, combine melted butter, sugar, brown sugar, mashed bananas, eggs, Greek yogurt, and vanilla extract.
  4. Gradually add the dry ingredients to the wet mixture until just combined. Fold in chocolate chips.
  5. Pour batter into muffin tins and bake for 10 minutes at 425°F, then reduce the heat to 350°F (175°C) and bake for an additional 15-20 minutes.
