Imagine sinking your teeth into a warm, golden fried flour shell filled with spicy, savory turkey—it’s the taco night of Molly’s dreams, and it’s about to become yours too!
Ingredients
For the Taco Shells:
- 2 tablespoons (25 grams) neutral oil, plus more for frying
- 12 street taco-size flour tortillas
- Kosher salt
For the Taco Filling:
- 1 pound (454 grams) ground turkey
- 1 medium onion, finely chopped
- 3 tablespoons (45 grams) tomato paste
- 1 tablespoon (8 grams) chili powder
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- 1/2 teaspoon garlic powder
- 1/2 teaspoon dried oregano
- 1/4 teaspoon ground cayenne
- 1 1/2 cups (360 grams) beer
- 1 tablespoon (15 grams) cider vinegar
For Serving:
- Shredded Cheddar
- Shredded lettuce
- Sour cream
- Chopped scallions
- Red salsa
- Lime wedges
- Fresh cilantro leaves
Directions
-
Make the Taco Shells:
- Line a baking sheet with a cooling rack. Heat about 1 inch of neutral oil in a large skillet to approximately 350 degrees F.
- Add a tortilla to the skillet and cook until just softened (about 10 seconds).
- Using tongs, flip the tortilla and fold it in half to create a pocket. Continue frying, turning as needed until the shell is crisp and golden, about 1-2 minutes.
- Transfer to the cooling rack to drain, seasoning lightly with salt. Repeat the process with the remaining tortillas.
-
Prepare the Filling:
- In a large skillet, heat 2 tablespoons of neutral oil over medium heat. Add the ground turkey and chopped onion, cooking and crumbling with a wooden spoon until the turkey is lightly browned (3-4 minutes). If there’s excess juice, increase the heat to reduce it before moving on.
- Stir in the tomato paste, chili powder, cumin, paprika, garlic powder, oregano, cayenne, and 1 teaspoon of salt, mixing until the meat is well coated with the spices.
- Pour in the beer and cider vinegar. Bring to a vigorous simmer, cooking until the mixture thickens (8-10 minutes).
-
Assemble & Serve:
- Spoon the flavorful turkey filling into your freshly made taco shells.
- Top with your favorite toppings such as shredded Cheddar, lettuce, sour cream, scallions, salsa, lime wedges, and fresh cilantro.
Enjoy!
