In this week’s episode of What I Eat in a Week, I’ll be sharing some easy and delicious recipes that I cooked and enjoyed. As we are in the midst of the holiday season, cozy nights, and festive vibes, I wanted to create meals that bring comfort and joy to my week.

To start off, I made a comforting pot of Filipino Chicken Congee, a warm and nourishing dish perfect for these chilly winter days. The next day, I prepared a flavorful Braised Pork Belly served with Egg Fried Rice and Bok Choy, a satisfying meal that is sure to please your taste buds.

For a lunchtime treat, I whipped up the ultimate sandwich with homemade pesto and creamy burrata, a simple yet delicious combination that you’ll love. And for dinner, I indulged in a fan favorite Galbi Jin, a Korean beef stew that is rich in flavor and packed with tender meat.

I also spent some quality time with my mom wrapping up some Pork and Chive Dumplings, a fun and tasty activity that brings back memories of family gatherings. To end the week on a high note, my friend and I enjoyed our annual Christmas Market date night filled with yummy food and holiday shopping, followed by a surprise Canucks game with our husbands.
