These easy eggplant fries are delicious – crispy on the outside and creamy on the inside! Perfect as an appetizer or side dish! With just a few ingredients you can make delicious eggplant fries! This healthy and super easy to make snack will be a hit with your family and kids especially, and it really is a great substitute for traditional French fries. 1 Eggplant
1 Egg
2 tbsp Water
1/2 cup / 25g Panko breadcrumbs

2 tbsp olive oil

1 head broccoli, broken into florets
1/2 lemon, juiced
1/2 lemon, sliced
2 cloves garlic
1 handful parsley
