Delicious Purple Sweet Potato Pancakes: A Healthy and Vegan Breakfast Option! – Video

These purple sweet potato pancakes are a delightful and nutritious plant-based breakfast treat that can be enjoyed whether you prefer something sweet or something savory. In this cooking video, Jill from the Whole Food Plant-Based Cooking Show demonstrates how to make these delicious little pancakes using purple sweet potatoes, buckwheat flour, flaxmeal, and some seasonings.

The recipe starts with cooking the sweet potatoes in an instant pot, then mashing them into a puree. The puree is then mixed with buckwheat flour, flaxmeal, and a hint of saltiness. The mixture is formed into small balls, rolled in sesame seeds, and then flattened into little pancakes. Once they are lined on a baking sheet, they are baked in the oven until they are golden and crispy.

Jill also shares some helpful tips and nutritional information about the benefits of purple sweet potatoes and the importance of incorporating essential nutrients into a plant-based diet. She also introduces Whole Harvest, a meal delivery service that offers nutritious and convenient plant-based meals for those who need a break from cooking.

Whether you prefer to top these purple sweet potato pancakes with peanut butter and jam for a sweet breakfast, or enjoy them with savory dips like hummus, these little pancakes are versatile and delicious. They are a great option for a plant-based breakfast or anytime snack, and with their vibrant purple color, they are as tasty as they are appealing.
