This is where I would go, seeing new places and things for the first time, because driving 10hrs from Canada to the USA things are the same. You've never stream in district 3, although alot of French architectures have lost the streets still have nice tall tropical trees and these don't last long because the city usually trim them before the rain season and a lot of them fall during typhoons.
Ben Xua is a small scale "coffee-garden" they have a big one: Phuc Loc Tho, Long An province, The owner purchased old historical houses around the country and put them together in one architectural museum and one up north where historical houses arranged under giant limestones, very picturesque but I forget the name.
If you like birds, they have bird market near Thuan Kieu plaza in Cholon. There are Chinese concentrations in all districts not just Cholon, these are Chinese from Hanoi, Haiphong, centrals Vietnam, and the Mekong regions migrated to Saigon during the war. Test around you will be surprised, plus now young Chinese are making a come back by learning Chinese. But your Vietnamese is getting better, the pronunciation is 8/10.
