It’s so funny how I’m watching your video as I eat a pizza that I picked up from Whole Foods. It’s one of my favorite treats and you did a good job.
Noooo David you got it wrong in Trinidad 🇹🇹 we sprinkle cheese on top the dough put your preferred ingredients like pineapple green peppers pepperoni etc then more cheese and put it to bake…when it comes out THEN we add mustard and ketchup on top ☺️

The base shouldnt be mustard, its usually tomato but you can add mustard when is cooked

He's right! You don't need to become a chef to understand food and flavor. Rather you just need to study the food and seasoning/herb combinations and flavors that results for each cuisine you are learning. The basic undertones of Indian and Mexican and Thai are similar and build on each other – or can set them apart based on how much is used and what it is used with.
You could learn a lot more just buying a GOOD cookbook from each cuisine and studying them and noticing the similarities and differences in flavors of the dishes the recipes produced.
An easier way you can think about the cuisines is what you are expecting when you go into the particular restaurant. In French restaurants I'd look for uses of Alliums -or garlic , shallots, and onions along with wine and butter AND aromatic HERBS/.
For a Mexican Restaurant, for the food to deliver the most flavor,like the French, I would look to Alliums but also specifically coriander or cilantro, lime juice chiles and more.
For Indian you add on to the Mexican base but make sure to add in Fresh GINGER to the fresh garlic.Then add additional herbs like tur.

For Asian, you make sure you have the garlic/ginger base but then add in the vinegar, soy sauce and toasted nut oils(toasted sesame oil) and hot peppers plus the fresh herbs like Basil, Parsley.
Better yet, as long a I have been subscribed to your channel, I have been subscribed to cooking channels from these cuisines so I can learn to make what I see you eat when you are off on your exotic trips. I would visit those and learn from them. You'll learn a lot faster than you would enrolling in culinary school.

No no no david! Thats not a Trinidadian pizza! Dont do us that 😅… we have normal pizzas your choice of toppings… and then you can "dress" your pizza ontop with ketchup..mustard … and not heinz ketchup either 😅😅…

Great video…..next time add mustard after the pizza is cooked…Cut up the pineapples in smaller pieces add ham …..then add the mustard, ketchup and your famous pepper sauce 😊
