In the heart of every village in Turkey, there exists a tradition that unites families and friends around the table: making Çiğ Köfte. This dish, cherished for its bold flavors and vibrant colors, speaks volumes about our culinary heritage. Today, I invite you to join me on a journey through the time-honored craft of creating this meatless delight, using the finest ingredients straight from our own gardens and markets.
Ingredients
- 4 cups brown fine bulgur for köfte (or regular fine bulgur if unavailable)
- 2 cups boiling water
- 2 tablespoons tomato paste
- 2 tablespoons pepper paste (preferably Turkish red pepper paste)
- 1½ tablespoons red pepper flakes
- ½ tea glass isot pepper (Urfa pepper, for a smoky depth)
- ½ tea glass ground red pepper (paprika)
- 3 cloves garlic, grated
- 1 tea glass vegetable oil (optionally mixed with olive oil for added richness)
- ½ tea glass pomegranate molasses (for a sweet tang)
- 2 tablespoons sumac (for a citrusy punch)
- 1½ teaspoons cumin (for warmth and earthiness)
- 1 teaspoon black pepper
- 2 onions, grated with the juice squeezed out
- 1 teaspoon salt (adjust to taste)
While kneading:
- Cold water, as needed
- OR 1 small tomato, grated
At the end:
- A few ice cubes (to keep it cool and fresh)

Prepare the Bulgur: In a large bowl, place the fine bulgur and pour the boiling water over it. Cover this with a cloth or lid, allowing it to rest for about 10 minutes. This step is crucial as it allows the bulgur to soften beautifully.

Combine Ingredients: Once the bulgur has absorbed the water, add all the ingredients – the vibrant tomato and pepper pastes, aromatic spices, and the sweet pomegranate molasses.
