  • ½ tea glass pomegranate molasses (for a sweet tang)
  • 2 tablespoons sumac (for a citrusy punch)
  • 1½ teaspoons cumin (for warmth and earthiness)
  • 1 teaspoon black pepper
  • 2 onions, grated with the juice squeezed out
  • 1 teaspoon salt (adjust to taste)

While kneading:

  • Cold water, as needed
  • OR 1 small tomato, grated

At the end:

  • A few ice cubes (to keep it cool and fresh)

Instructions

  1. Prepare the Bulgur: In a large bowl, place the fine bulgur and pour the boiling water over it. Cover this with a cloth or lid, allowing it to rest for about 10 minutes. This step is crucial as it allows the bulgur to soften beautifully.
