Ingredients
- 2 lbs of ground pork
- 1 lb of ground beef
- 1 cup diced fresh jalapeños (seeds removed for less heat)
- 1/2 cup grated cheddar cheese
- 3 tbsp BBQ spice blend (smoked paprika, garlic powder, brown sugar, salt, and pepper)
- 1 tbsp Worcestershire sauce
- Sausage casings (natural or synthetic)
Instructions
-
Prep Your Equipment: Before starting, soak your sausage casings in cold water for at least 30 minutes to make them easier to work with.
-
Mix the Meat: In a large bowl, combine the ground pork and beef. Add in the diced jalapeños, cheddar cheese, BBQ spice blend, and Worcestershire sauce. Mix thoroughly with your hands until evenly blended.
-
Stuff the Sausage: Rinse the soaked casings thoroughly. Using a sausage stuffer, carefully fill each casing with the meat mixture, being mindful not to overstuff.
-
Twist and Tie: Once filled, twist the sausages into 6-inch links and tie them off using kitchen twine.
-
Smoke the Sausages: Preheat your smoker to 225°F. Smoke the sausages for about 2-3 hours, or until they reach an internal temperature of 160°F. Make sure to periodically check the temperature and adjust your wood chips for optimal flavor.
-
Serve and Enjoy: Once smoked, let them rest for a few minutes. Slice them up, serve with your favorite BBQ sauce, or toss them on a bun with all the traditional toppings.
The Experience
As you take a bite into your homemade smoked jalapeño sausage, you’ll find yourself transported to RJ’s Bob-Be-Que Shack, where the aromas of smoke mingle with the vibrant, spicy notes of jalapeño. Each bite is a testament to the rich BBQ tradition that Kansas City is famous for, making this dish a perfect addition to your next backyard BBQ or casual dinner.
